Therefore, it is ever more important to start the day motivated and energetic, and what better way than a great breakfast to start off the day? While exams and projects seem to be draining us of precious time, we suggest these breakfast ideas that take less than 10 minutes to prepare.
Homemade granola
For those who enjoy a sweet breakfast, granola and yogurt are great options. This granola can be stored for weeks in a dry place, making it very quick to prepare on weekday mornings.
To make your homemade granola, you’ll need:
- The nuts and dry fruits of your choice, 1 cup each
- 3 cups rolled oats
- ½ teaspoon cinnamon and nutmeg
- ½ cup honey
- ½ cup coconut oil
Mix everything together and put in a preheated oven till it becomes crispy and golden brown.
Avocado toast
If you are a savory breakfast person, your go-to can be a very easy avocado toast. All you need is:
- Half an avocado
- 1 tablespoon of olive oil
- 2 slices of toast
- Salt and pepper to taste
- Optional: cured salmon, pumpkin seeds, sun-dried tomatoes…
Toast your bread to your liking, mash the avocado with the olive oil and add your seasonings. Spread it on your bread, optionally adding chili flakes.
Egg bagels
If you’re looking for something heartier, but still quick and easy to prepare, egg bagels can be the option for you. You’ll need:
- 1 bagel
- 1 tablespoon of cream cheese
- 1 slice of tomato and some greens (arugula, spinach, lettuce…)
- 1 egg
- 2 tablespoons of milk of your choice
- 1 tablespoon olive oil
Whisk your egg and the milk and pour it into your heated, greased pan, scrambling with folding movements. Toast your bagel, then spread cream cheese and add your tomato and your scrambled egg on top.
Homemade crepes
Another idea for the sweet-breakfast types can be these delicious crepes with fresh fruit and honey.
For the crepes:
- 1 cup flour
- Butter or olive oil
- 1 teaspoon of salt
- 1 tablespoon of sugar
- 1.25 cup of milk
The topping:
- 7 strawberries
- Half a banana
- 2 tablespoons of honey
- Freshly whipped cream
For the crepes, combine the ingredients making sure the mix has no lumps. Heat up a pan with olive oil or butter and pour a little of the batter till it covers up the pan, flipping it once the other side is cooked (around 5 minutes).
To plate, stuff the crepe with the fruit of your choosing (we suggest banana and strawberries) and top with honey and whipped cream.
